Copenhagen chef Rene Redzepi, who is making his first visit to Ireland next month, tells Catherine Cleary about what drove him to create Noma, his admiration for Myrtle Allen, and the Irish chefs who have worked in his award-winning restaurant.

Rene Redzepi has spent a morning at home with a feverish daughter. Forty people are downstairs in Restaurant Noma having the lunch of their lives. Two wild-eyed Norwegian fans will want face time with him during the interview.

Last years figures rose from an anticipated 2500-3000 to a jaw dropping 8000 people including authors, chefs, bloggers, foragers, wine experts, gardeners, publishers, writers and journalists. Visitors came from all over the world, sharing and gaining knowledge about all things food and wine related.

Another place to spot well-known chefs at work – and at play – is the Ballymaloe LitFest of Food & Wine (first picture). Last year’s inaugural event, held at the Allen family’s legendary hotel, restaurant and cookery school in County Cork, proved that nobody throws a party quite like the Irish. It also featured panel discussions, cookery demonstrations and various themed lunches and dinners.

‘Dare to dream” could have been the theme of last year’s inaugural Ballymaloe Literary Festival of Food & Wine, when a star-studded line-up of food and wine writers from across the globe converged on the Co Cork hotel and cookery school for a weekend of demonstrations, debate and, of course, dining, in the company of 8,000 festival-goers.
